Vegetable Fried Rice

Ingredients:

2 cups brown rice

3 cups vegetable broth

1 onion, peeled and chopped

1 cup shredded carrots

1 cup broccoli slaw

1 cup edamame, shelled

3 tablespoons tamari, or low-sodium, no preservative soy sauce

1 tablespoon rice vinegar

2 teaspoons sesame oil

1 teaspoon garlic powder

1/2 teaspoon ginger powder

Directions:

  1. Cook rice in vegetable broth until soft and fluffy.
  2. Add chopped onion to saute pan and cook until soft. If onions start sticking to pan, add water 1 tablespoon at a time.
  3. Add carrots, broccoli slaw and edamame to onion. Stir and cook 5 minutes.
  4. Add cooked rice, tamari, rice vinegar, sesame oil, garlic powder and ginger powder. Stir to combine.
