Vegetable Barley Soup

1 onion, chopped

2 carrots, cut into small circles

2 celery stalks, chopped

1 sweet potato, peeled and cut into small pieces

4 garlic cloves, minced

1 zucchini, cut into small pieces

3/4 cup barley

1 teaspoon paprika

1 teaspoon dried oregano

3/4 teaspoon dried tyme



1 14 oz can petite diced tomatoes

6 cups low sodium vegetable broth

2 cups water


Combine all ingredients in slow cooker and cook on low for 8 hours or until barley is tender.
