Mini Banana Chocolate Chip Muffins

2 cups whole wheat flour

1 tablespoon baking powder (non-aluminum)

1/2 teaspoon salt

1/4 cup pure maple syrup

2 large, ripe bananas

1 large egg

1 cup unsweetened almond milk

6 tablespoons coconut oil, melted

1/4 cup mini chocolate chips


Preheat oven to 400 degrees.  Line mini muffin pan with paper liners or grease pan with coconut oil.

In a large mixing bowl sift flour, baking powder and salt.  Set aside.

In a small mixing bowl, mash the bananas until nearly smooth.  Add maple syrup.

In a small bowl, whisk egg, almond milk and coconut oil.  Add mixture to the bananas/syrup and mix well.

Add the banana mixture to the flour mixture.  Stir to combine.  Fold in chocolate chips.

Spoon mixture into muffin pan and bake for 10-12 minutes.

Remove from oven and let cool in pan.
