Lentil Soup


1 yellow onion, peeled and chopped

6 carrots, peeled and diced

6 celery stalks, diced

4-6 garlic cloves, peeled and smashed

1 sweet potato, peeled and diced

1 cup dried lentils

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon dried oregano

1/2 teaspoon dried turmeric

1 teaspoon salt

1/2 teaspoon black pepper


Place all ingredients in a large pot on the stove. If you need more liquid, add water to cover the vegetables and lentils completely. Cook on medium/high heat until vegetables are soft and lentils are cooked, about an hour.
