Bean Chili with Mushrooms and Rice


1 large onion, peeled and chopped

1 pound baby bella mushrooms, cleaned and chopped

4-6 cloves of garlic, peeled and minced

1 tablespoon ground cumin

1 tablespoon ground chipotle chili powder

1/2 teaspoon chili powder

1 tablespoon unsweetened cocoa powder

1 28- ounce can fire-roasted diced tomatoes

2 15-ounce cans pinto beans, drained and rinsed

1 cup uncooked brown rice


Place onion and mushrooms in large saucepan and saute for 10 minutes (if vegetables stick, add 1-2 tablespoons of water to keep from sticking). Add garlic, cumin, chili powders, cocoa powder and cook for 3 minutes. Add diced tomatoes, beans, rice and 2 cups of water. Simmer, covered for 25 minutes.
